Great pepper at a great price, has replaced many other peppers in my cooking.
The flavor is fantastic, raisiny, a subtle hint of something like cumin or coriander. Works great in rubs, in sauces, as a finishing garnish (the shaker makes its way over to the table rather frequently). I won't bother with red pepper flake anymore. Either just use this, or a mix of this and a hotter pepper powder like cayenne. On the other end of the spectrum, if dishes call for paprika, I might I sub out part of it for this.The Alleppo/Marash (aka maras) naming is odd, since they're often considered two different peppers. Don't let that bother you too much. First, given that the war in Syria has been on for several years now, anyone who is claiming to sell you Alleppo pepper from Alleppo is lying (or their suppliers in Turkey are lying to them). But the climate/soil 40 miles north in Turkey isn't that different, and seeds travel. Second, there is some question whether marash and Alleppo are even a different pepper cultivar (at worst, they are close cousins). Finally, some people believe the original food writers who made Alleppo famous were probably mistaken in what they were eating anyway, and that it could have been one of several peppers from the region. The bottom line is marash (and several other Turkish peppers) is quite good in its own right, and whatever this is is quite good.1 lb is a lot. Because the flakes are moist/oily (partly the pepper itself and the fact they aren't dried as hard, but partly due to added olive oil), I only keep a small amount out in a jar. The rest should go into an air-tight container (I used a washed peanut jar) in the fridge or freezer, which will keep it much longer (make sure the jar is air tight, though, or it will dry out even faster).

Chef Cheri's Aleppo has a punch but works great in rubs and on pizza
Much less punch than Cayenne so use more without killing your guests. A milder and more aromatic replacement for Cayenne but much hotter than Spanish or Hungarian Paprikas. Highly recommended.

One of my favorite spices to use. Adds a wonderful light smokey/sweet heat (equal to black pepper)that's not overwhelming to your food. You can put in on anything.

Great, easy to use container. Great price! Surprising quality and service from company.I was worried about buying spices online. Freshness is an issue with spices, especially those that sit in stores for months before puchase. This Aleppo Pepper was ordered with ground bay leaves from same company. Fast service and very fresh and high quality. This is nice Aleppo with good color and fragrance. We use it on almost everything, but pizza and TurkishLahmajun are outstanding with it. We always store ground spices in refrigerator to retain this wonderful freshness.

Awesome! So fresh you'll feel like you just bought it from a Turkish spice market. I've never found Turkish spices of this quality outside of Turkey! Shipping was CRAZY FAST! And they combined shipping automatically which saved me a bunch of money. Good for any Middle Eastern or American dish asking for red peppers. These are the purest tastiest red peppers you'll ever find.

I had been looking everywhere for Marash Pepper. ...so glad to have found it here! It has perfect pepper flavor and with no seeds, it provides a much better texture to Mediterranean cooking that what you find in the grocery store.
