and I love to cook--there's just not always as much time to ...
So far I'm thoroughly enjoying this little cookbook. I'm a senior in college who's actively trying to avoid processed foods in my diet, and I love to cook--there's just not always as much time to do so as I'd like. After flipping once through this cookbook, I've already earmarked almost 20 different recipes I feel I could make immediately, with only a couple of ingredients to pick up that I don't already have. I also appreciate that most of these recipes don't rely so heavily on meat, as I try and limit my own meat consumption.So far I've made the Greek Lemon and Egg Soup with Dandelion Greens (I tweeked my version and made it with chicken broth instead of vegetable, and added a couple of handfuls of shredded chicken to the soup for a more substantial meal). It was delicious, took less than 20 minutes as promised, and both my boyfriend and little sister went back for multiple servings. (I should also add that it certainly made more than 4 serving's worth--even after all 3 of us had multiple bowls, I still had leftovers!) I'll definitely be making it again. The lemon really is an ingenious way to brighten a basic bowl of soup and it felt very appropriate as a winter dinner.Today I'm trying the Grilled Asparagus and Sliced Potato Salad with Anchovy butter (I'm subbing in broccoli for the asparagus, because I have it on hand, and adding in some diced hard-boiled eggs as suggested, to make this salad into a meal). I have a feeling it'll be both simple and delicious. I love the author's frequent substitution suggestions, as clearly, they've already helped me think outside the box when using these recipes. I'd recommend this cookbook to anyone who, like myself, appreciates good and healthy food that can be prepared relatively quickly.

I'm a cardiologist and recognize that most of the heart disease that I see in my practice is predominately due to unhealthy diet and sedentary lifestyle. My advice to my patients who want to get healthier is to eat real food (avoid heavily refined/processed foods) and eat at home as much as possible. This cookbook demonstrates how simple recipes can taste amazing and be affordable. We've marked over 1/2 the recipes to try and the 2 we've made so far were easy and delicious. Glad I picked it up and I will be recommending it to my patients.

Very Inspiring!
Beautifully photographed and inspiring. As a stay at home mom who likes to cook, I appreciated the lay out and size of the book for actually taking the book to the grocery store instead of having to write a list. She does a great job of offering other ingredients when it is something a bit out of the ordinary. Yummy!

Quick Simple Recipes
The simplicity and time saved are a major plus, particularly when added to the tasty results. Lotsof photos. The style of presentation of the ingredients subtracts a little.

More complicated than expected
I was hoping this book would include less complex recipes for less complex taste buds. I really wouldn't eat most of the things in this book. The good part is that it has all these little notes in it that show you what ingredients can be substituted with what - very helpful.

different and intriguing
Just having purchased and read each recipe, very enthralled and can't wait to try them! And...they look very healthy and that pleases my scale!

It is a good cookbook.
There are some recipes that I really like. For me the rest is ok, but probably will not try out.
