Cugino's Gourmet Foods, Ridiculously Delicious Soups, 8 Cup Chicken Enchilada Soup, 4.3-Ounce Boxes (Pack of 6)

I discovered this soup mix at a store that after one purchase, no longer stocked this.. so I searched and found it here at Amazon.I love this soup.. it is quick and easy to make and tastes so good on a cold winters day. A nice alternative to making chili.What I like about it is that it can stand alone.. but for me.. it is just a great base to start your soup with.. and I tend to add a lot of things to it.... chopped/shredded chicken, onions, beans (kidney or black beans) cheese etc. and of course the tortilla strips.I fixed this as a side dish for a family get together and everyone wanted the recipe.. I wished I had made two pots of it for the first pot disappeared so quickly.Depending on what your looking for... you can make a very basic soup with this.. or you can jazz it up to your hearts content by adding in things that would go with and or compliment this type of soup.Thumbs up from me!

I bought a box of these because our former favorite Chicken Tortilla Queso soup from Just For Joy went away, when they went out of business :( The reviews sounded great. Before I buy food online or anywhere, I read labels and am careful because due to my child's food allergies, we do not allow food in our home that contains nuts or coconut OR whose labels read that they are made in shared facilities/equipment with nuts or coconut- because of his severe allergy and chance for cross-contamination. When we got the packages of this soup, it had the said nut warning on it. On that note, the FDA requires clear labeling of ingredients, but does not yet require the contamination warning labeling. Any company already doing this is ahead of the game, and Cugino's is doing it. Though I do wish they would have dedicated equipment so I could try their soup with my family, I am proud of them for declaring it. We will have to find another soup for our family, but we have given out these soup kits with a can of chicken, can of beans, and tortilla chips as gifts for sick friends and new moms, and everyone has loved it. So buy the soup, just not if you have nut allergies!

I used to be able to find this boxed soup at Big Lots, but began purchasing online after several fruitless searches at the local stores. I have bought directly through the manufacturer, but it's cheaper here on Amazon for whatever reason.I use the boxed soup as a base & add in:1/2 rotisserie chicken (shredded)Diced sweet onion & either a yellow or red bell pepper that have been cooked down in some chicken broth3 links of mild Italian Sausage, cutCan of kidney beansCan of diced tomatoesI frequently double the recipe to serve to larger crowds I always get compliments. This is a dish that is in high rotation, especially in the colder months.

I introduced several other people to this soup and all of them love it.When I make the soup I combine the mix, the water and the tomato sauce in a 6 qt pot. I add a pound of boneless chicken breasts. Simmer soup until chicken is tender enough to shred. Remove chicken to cutting board and shred with a fork (the texture is much better in the soup than cubing it). Return chicken to pot. Add 1 can each black beans, pinto beans and Green Giant's Mexi-corn. Heat through. Serve in bowls. Top with shredded cheese of your choice, chopped green onions and Tostitos Dipping Strips.

We tried this soup one day from a gourmet store on a whim, hoping it would taste like tortilla soup. Its very tasty. This soup is quick and easy to make. We add chicken, and then at the table, we have fixins...shredded cheddar cheese, tortilla chips and sour cream. I cannot get enough of this soup! We are so pleased to find it on Amazon because we have not been able to find it in stores near us.

I love Cuginos! Honestly, I use two boxes/bags combined to make huge batches and often add extra ingredients like chicken and beans to stretch even further! I buy on Amazon depending on where we live and whether the local stores carry Cuginos or not. Thank goodness for Amazon!!

I absolutely love this soup. I used to be able to get it in Shop Rite then all of the sudden I couldn't find it anywhere! I finally thought to look on Amazon and naturally, they had it. I add some taco shreaded cheese and tortilla chips to each bowl when serving and it always gets rave reviews! Thanks Amazon!

We tried this soup when they had it on sale at Safeway in the Specialty Items section. It is so good we wanted more. They discontinued it, so we Amazon-ed and were pleased to find it here. This soup is great made to order or with all sorts of items added. We put chicken, black beans, corn, 2 small cans of authentic salsa, jalapenos and sometimes leftovers of all sorts into the mix and it is always great. Wonderful winter warmer. Try it, you'll see.
