Could this be used to just store wines? If so, how many bottles?

If you want you can store wine, as to how many bottles not sure. If only wanting to use for wine I would look into the wine unit.

Is the spacing around the unit supposed to be 1 - 5" rather than the 1/5" indicated in the operating manual? The slash has to be a typo.

No, not a misprint. This unit is meant to be built in, so it can be basically flush on all sides. It vents from the front at the bottom, so it doesn't need the space like oth units not made to be built in.

Do you have to allow extra space(depth)for the power cord?

Probably depends were your outlet isIf it's low to the floor you won't have toMine sticks out about an inch anyway and it looks okay

Will this unit fit into a 14.75" undercounter opening (It says 15" width but is that exact)?

Per the dimensional drawing, this unit is 14-15/16" wide.
