Foundational cookbook and textbook
Bought this for an on-line class with Boston Culinary Institute. It's a textbook for people interested in careers in the restaurant and food handling professions. It answers many basic food safety and cooking questions and also has classic and relatively easy recipes. It's very well indexed. It covers food preparation and safety topics that an ordinary cookbook barely considers. I'd buy this before I bought another cookbook because the information is so fundamental.
