Would this work well with stone for mining?

I have used mine in soil with rocks and clay, like for fence posts, etc....and I thought it was great. Your application sounds more heavy duty, but I would think it would work fine. Good luck....

How wide is the head?

Approximately 3” wide one side has a beveled edge

can I use a hammer on the flat end to help dig into ground

Honestly don’t see why not. However it’s heavy enough as is. Hope this helps.
