Are the floors of the baskets detachable or are the baskets (minus the lids) one-piece? In other words can the bottom drop out?

Hi VeganSuperhero,The food steamer has three transparent bowls and they come apart depending on how you would like to you use it., you can use the white ring as a separator (it comes in one piece but you may take it out from each other) and then top it off with the transparent lid.Each transparent bowl is one piece (each floor has circular cut-outs for steam to penetrate)Hope this helps,Supersaver

What is the cooked rice capacity of the rice bowl?

it is very limited. Best way to cook rice is a rice cooker. ovente does not yield the same quality as rice cooker.
