Great for sourdough proofing
I picked this up to dust the liner of my banneton basket for proofing my sourdough loaves. I initially used plain all-purpose flour, but it would just absorb into the loaf and leave the linen liner sticky. I also saw videos of people dusting their loaves with rice flour prior to scoring, as it stays white on the surface of the bread and doesn’t just absorb into the dough as it steams. You get a nice color contrast when doing decorative scores.

Good for gluten free
I got this gluten free rice flour to try out in some of my baking. I am gluten free, not by choice. It worked well for blueberry muffins. It does have a distinctive taste and the texture is more grainy than normal flour. But it is good. Its also maybe stronger , like it holds shape better. The flavor isnt of rice its just kind of like grain. I would recommend it and I would use it more often if it wasnt so expensive.

Fixed the problem
**Updated to say Amazon customer support came through and resolved the issue **Just got this today from Amazon. It’s non returnable as it’s a food item. Contacted Bobs customer service since it was direct from the store. Was told I had to contact Amazon who already said it’s not returnable. I guess I have to just absorb the cost of crappy quality control. Won’t be using your product again
