Does not harden at room temperature
I need tallow that hardens at room temperature. I bought 25 lbs of tallow from MD and it does not harden. I also bought another tallow which did not harden. I have made my own tallow from bovine fat, not necessarily kidney fat, and it always hardens when I finish cooking it down. It hardens quickly, too. Disappointed, as I need this for creams and do not want it so oily and runny.
