Great for pizza dough and Szechwanese hand shaven noodles. When you start kneading it it's like cotton candy, then it firms up as you work it.

Both the red and blue repack are amazing flour, a must have for exceptional pizza crust. I've cooked in my oven at 550° and on my grill at 1000° and I'm never disappointed. Perfect for the thin crust pizza lover. Still experimenting with minor adjustments in recipes but I'll keep on using this product. I buy the 20 lb. repack since I make 3-6 pies a week.
