Hi, our nibs have roughly 50% cocoa butter, so there is approximately 50% cocoa butter in the 100% and 35% in the 72% bar. We do not extract or remove the cocoa butter in our process. What is in the cocoa nibs is in the chocolate. Regards,Team Jus'Trufs
