Is there a variety of this that is more flexible for tying shoelaces than #60 Tarred? Or will they take more than a week to break in?

I would not recommend using for shoelaces. It is sort of waxy or greasy.

does this stuff turn your hands black?

I've used a lot of tarred bankline and it's never happened, although there is a slight stickyness if you run it through your hands a lot.

Is the higher the number the bigger the line?

Yes, that's right. #12 is a pretty thin diameter. #96 is a lot thicker and stronger. The factory sells it by the quarter pound or pound, so with the smaller sizes you get a lot more line per spool.
