Revised and updated! With more than forty years of experience butchering domestic animals, game, and birds, award-winning outdoor writer and photographer Monte Burch presents this complete guide for butchering many types of livestock or wild animals. Learn how to butcher cows, chickens, goats, hogs, deer, turkeys, rabbits, and more, with simple and easy-to-follow, step-by-step photographs and illustrations. Burch also provides recommendations on which tools (knives, paring knives, meat scissors, meat grinders, shrink-wrappers) to use for the task at hand. He lists detailed instructions on how to butcher each animal and use each part, so nothing goes to waste. Now youโll be able to prepare meat for salting and curing, freezing, sausage making, and more. From field dressing, skinning, and boning out a whole deer to efficiently plucking ducks and bleeding out hogs, The Ultimate Guide to Home Butchering is the one-stop guide to help you become more self-sufficient in preparing your meat for your table. Review: Just What I Needed. - I have a dozen such books for reference material. This one has some reallyu good ideas, techniques and recipes for a very specialized cooking skill and clientele. It's well written and inspirational. This will be a handy book of knowledge, and a culinary skill when the SHTF; at a time when a WORTHY, and Profitable Skill Set could save lives. Review: a quick, illustrative, no-nonsense guide to making your own meat. - This is a very informative book that delivers exactly what it promises. With this you know exactly how to cut up any farm animal or most of the creatures you might catch, at least in North America, while hunting. This book explains what tools are needed, how to use them, and safety tips both in the cutting and managing of the meat. The best part about it is that it tells you about how much space and what you can and cannot do with various tools and does not urge on rash undertakings in home butchering. On the plus side for someone who is interested in such tings, it also explains the benefits and drawbacks of various types of meats and how some of them have changed, even answering my question I have long held on how pork went from a meat you were told to avoid no matter what to one of the healthier meats which I found very interesting. I will likely never butcher my own meat, but if you want to, or you are just curious on how it is done, which is why I bought it, this is the book for you.

Excellent, Superb, Superior, Not to be Missed
I really appreciate Monte Burch sharing his considerable time, talent, and experience with us. In my younger days I gutted and skinned a few critters, and one thing I know for sure is that you have to know what you are doing, or you can easily spoil meat and/or ruin a hide. In a few short words, THIS BOOK IS INCREDIBLE! It is replete with numerous mostly color photos and well-done illustrations, leaving little doubt as to what to do to do a good job. To some who do not give this book 5 stars, I can only say that they must be jealous or unclear on the concept. Monte Burch is a de facto PhD in farming, ranching, and outdoor living skills. Don't miss out, if you want clear and unambiguous instructions, buy this book. And thanks Monte for your masterful work on a very important subject! I would only add one caveat, rather than using a club to kill a rabbit as shown on page 169, many people like The Rabbit Wringer, just google it. It is a device that is quick and efficient and results in near-zero pain to the rabbit or chicken. We owe it to our animal friends to dispatch them without fear or pain, and this product does that. A club works on a rabbit, but a miss can bruise the animal's shoulder and ruin some meat, plus you could strike/wound your own hand or arm.

A VERY well written book
I grew up on a beef ranch and we've been butchering our own cattle for years. I like to get new books on it every now and then to see if there's any new/different techniques to try. This book is super well written, clear, concise, and informative. Definitely a good addition to any library. Would highly recommend.

Perfect for anyone who is interested in butchering
My husband likes to process his own game meat of elk and or deer. Heโs always been interested in doing the correct cuts and honestly just good information about butchering meat. So this was the perfect gift for him just to give him more information about what he loves to do. And to perfect his processing techniques.
