Chocolate tastes good. We are trialing chocolates to make the best chocolate covered strawberries. We want the chocolate to become like a shell over the strawberry that cracks when bit into. Opposed to soft gooey covering. So this chocolate does become a shell, although not as hard a shell as we are looking for. We might try combining it with another good chocolate.

I purchased this and Callebaut's 11 pound milk chocolate at the same time. The Guittard is by far superior. It has a rich chocolate flavor (which the Callebaut lacks) as well as a better texture. The 10 pound bar came packed in original Guittard wrapping, plus shipper's additional wrapper, and biodegradable "styrofoam," all enclosed in a cardboard box. However, the bar did arrived with one break. Not an issue for me, but might make a less-than-stellar gift.

Our 2nd favorite Guittard chocolate and 2nd overall.

The chocolate block came through shipping with one small crack. It was easy to cut, melted well and had a rich flavor. I typically buy Peter’s Chocolate and still prefer the creamier texture of Peter’s brand. This was a good alternative for those who like a little darker chocolate for making candy.
