Are the chat volume and game volume separate?

No, on ps5 you can raise the chat volume but that lowers the game volume at the same time. Same happens when you raise game volume it then lowers your chat volume. There is no way to set game and chat audio independently of each other.

Will this headset work with a Nintendo Switch?

It WILL work with the Nintendo Switch via Bluetooth or with the included USB dongle, both when docked and in portable mode. However, in portable mode you will need a USB-C male to USB-A female adapter if you choose to use the dongle. I use the USB adapter that came with my Mayflash controller adapter and it works perfectly. 
I also often use a 3ft USB-C extension cable plugged into my Switch, with the Mayflash adapter plugged into the female end of the extension cable. I then plug in my USB-A Ethernet adapter/USB Hub into the Mayflash adapter. My Ethernet adapter has 3 USB-A ports, so I just plug the Turtle Beach dongle into that, along with an extra long, flat, Ethernet cable. 
Since I don’t get a strong wi-fi signal in my bedroom I can play handheld in bed, while still using wired Internet, and also use my Turtle Beach 700 Gen 2 headset connected via the dongle while also connecting it to my phone via Bluetooth. This gives me the option to chat through the headset mic while playing Mario Kart, or use Discord for games that don’t use the Nintendo App. I can still take phone calls, or listen to music/podcasts while playing portably too. 
Having the Turtle Beach app makes it easy to control the volume for the Switch and the phone so you can choose which one you want to be louder. It also allows you to hear and adjust the volume of your microphone, adjust the strength of the Superhuman Hearing feature, and also adjust the treble and bass to your preference.  
Everything works great, and by using the 3ft usb-c extension cable (male to female) it makes it very easy and comfortable, especially if your cable is designed with a 90° angle so you can rest your Switch comfortably on anything without bending/damaging the cable while playing.

Will this work for Xbox 1?

They will work for both counsels but the BLUE ones are better suited for the playstation and the GREEN ones are better suited for xbox
