Would this support two 27" curved monitors?

Honestly Depends on Weight of Each Monitor, I use it with 2x27” monitors (One LG and a Samsung) and it can get away with it as the Samsung Mounts closer to the table (is lower) and even then if I move one I have to hold the other one to stop it going lopsided. Best advice check your weight for each monitor and hope for the best

Would this support 2 monitors using the ikea linnmon desk? the desk is prone to caving in under harsh weight from clamps.

The stand has a base section which sits on top of the desk, so you should be just fine. It should be ok with Ikea desks as long as you don't use a clamp type bracket. Ikea desks are usually a honey-comb type and can't take clamps or screws.
