This time I wanted to push the boat out a bit more and make some bigger batches of foraged misos, like the wild garlic sweet miso in the second pic, so went for a one kilo pack. And what is there to say other than it's exactly the quality and consistency I expected, just in a larger pack. Definitely give this a go if you're interested in making up bigger batches of Japanese style ferments, as I honestly think you'll struggle to find better quality UK produced rice koji. When the product arrive, product expiry date was within two month, so I had to use it quickly but still didn’t work. What a waste of money!

Don’t waste your money, product must be very old!
Tried to make Amazake and Shio Koji, temperature and right but it didn’t work. When the product arrive, product expiry date was within two month, so I had to use it quickly but still didn’t work. What a waste of money!

Rice koji
Have made shio koji and am using it as a marinade/ seasoning. ( roasted carrots - big difference. leg of lamb was really good too.) Have also made some miso. Have to leave that for 6 months so can’t comment on it yet!

Perfect.
A great product for those who are unable to grow their own koji for whatever reason. Ours being space. We've made many successful ferments with it. Our picture was a sweet miso made from red lentils and foraged chanterelle mushrooms.

Wonderful service
Great koji rice. Very easy to use for miso. First packet arrived damaged so I emailed Jackie at Umami Chef who sent a replacement straight away, couldn't ask for better service. Now to wait for my miso to be ready!

Quality of Kouji was not my standard.
I think your KOJI is not my standard. Always struggling to use it. Also delivery was delay all the time. Last one was I was away. I was at home you informed the day. But 5days later still arrived. Then delivery people left it outside not under the roof. When I came back the bag was awful looking. I was very upset.
