This was the perfect mold to set up the mousse layers of this chocolate espresso mousse layer cake. Really make it so much easier than trying to trim the ooze from the sides.

This is a standard adjustable cake ring. It’s tall and the inside of the ring is clear of obstructions so you can line it with acetate. On its smallest size it works great, but it becomes a bit difficult to deal with when you’re trying to make a larger cake. The inner and outer parts of the ring really want to separate and/or coil in on itself again. It has a metal clip to hold them together, but without a second clip it can either hold in the “tail” end on the inside OR clip the middle of the spiral together, not both. It’s hard to explain, so I attached photos. I got it to work for an 8” cake, but it was a bit difficult. Also, there are no measurement markings to show the diameter and I had to measure it myself. You have to wrestle with it a bit and have something to measure the diameter with. It’s frustrating because a second cheap piece of metal would have completely solved this problem.I tried a “locking” cake ring before ordering this one, but that one had a large screw that stuck out in the middle of the ring, rendering it pointless. This cake ring isn’t perfect, but it will work until I find something better.
