Can we season these like we would season a new cutting board?

Yes, seasoning these kitchen tools with a high smoke point fat like coconut oil or lard/tallow would work well.

Can these be put in the dishwasher?

No !!! Never put these or anything else wooden to include knife handles in a dishwasher. The heat, pressure and steam is too much for anything made of or containing wood.
