Great book with both Cajun Creole recipes
I really enjoyed reading this book and I am looking for some nice odors of cajun, creole, Louisiana and other parts in my kitchen. Recipes originate from the chef's family, friends, and experiments. They are for the most parts, crucial pieces of the local cuisine patrimoine like okra gumbo, but others are more original as the crawfish cakes. I recommend this book especially for the bouillons recipes, the home made spices blends just to cite these ones. I am really looking forward cooking soon. I love Louisiana and its gastronomie , it is going to be gooooood! Nothing complicated here even if you are a beginner! Moreover it is detailed and explain the chef is empathic and that is great news!!!

I seen better Cajun recipe books. The commentary and the recipes are only so-so. I am Cajun and was looking for some recipes from my childhood that I can't find in print. This was disappointing.

Excellent cookbook
This cookbook is crammed full of very helpful recipes and tips. Right away I learned a way to make a quick roux. No more worries about burning it. This is a prefect book for someone new at Cajun cooking. I'm not new, but still found many good, new ideas.
