A great combination for making excellent Keto Bread!
I have produced Keto bread that could double as a door stop for an Airplane Hanger. BUT The recipes that call for both Vital Wheat Gluten and Oat Fiber, along with Flax seed flour and yeast, have been phenomenal! The Vital wheat and oat fiber are very low in carbs and the recipe shown above has less than 2 carbs per slice. The consistency of the bread, due to the Vital Wheat Gluten, is reminiscent of really good sourdough bread, spongy, moist and makes fantastic toast. It is the first time in Years I have had any bread! Even just slathered with butter, these ingredients are a godsend and are reasonably priced. Forget the recipes with baking powder and psyllium husks and make real Keto bread with yeast, flax and these two products.

Pricey, but fresh and never fails in my seitan recipes!
The title of my review pretty much says it all, yet I canโt help but wax a bit poetic about the perfect results I achieve from using Anthonyโs high quality products in my cooking and baking, Anthonyโs vital wheat gluten is especially fantastic for making seitan, yielding perfect results every time if you have good recipes and donโt knead it too much. (Less handling is almost always better.) My plant based sausages, no-chicken patties, meatless balls, lunch โmeats,โ roasts, โribsโ and other vegan delights are superior to any commercially produced products my family has tried. Freshness and flavor of all Anthony's grains and flours have been consistently good. So for this level of quality I have obviously been willing to pay a higher price. After years of successful outcomes in my kitchen, my worries about creating delicious plant based meat substitutes have been eliminated. Thank you, Anthonyโs!

GOOD QUALITY
Anthonyโs Premium Vital Wheat Gluten is great for making your own bread. I think this is the secret ingredient to having a really good tasting, good texture, bread. The bag Iโve received is intact and not compromised. Even though there isnโt a stamped expiration date on the resealable bag, the gluten flour smells fresh and, although Iโve been warned not to, Iโve tasted the gluten flour straight out from the bag and it tastes like โ bread! It smells like whole wheat flour that you use for baking bread. This wheat gluten is finely milled, so it looks and feels like flour. The gluten flourโs color is a very light beige/ivory. Overall, this gluten flour is a high quality product. I definitely will recommend it to my fellow bakers โ especially to those who love making their own bread . Thank you Anthony!

I use this is all my recipes for low carb bread because it gives a nice rise and the texture is similar to the regular bread. I have always found the quality products from Anthonys

Makes excellent low carb bread and substitues well for breadcrumbs in meatloaf recipes.
I use Anthony's gluten for a lot of things. I mostly use it in making bread. It makes excellent bread texture and rise when you are making regular bread and you only have to add a tablespoon two to each cup of flour depending on what kind of flour you use (bread flower has more gluten already in it, so you don't need as much and whole wheat bread will do better if you add 4 or more tablespoons per cup since the bran tends to slice through gluten strands and prevent a good rise....adding more will help to keep this at bay and help rising.). If, like me, you are going on a lower carb diet, this product is something YOU MUST HAVE! If you want to keep eating bread, that is! So, I make a recipe that has about 1/3 Oat fibre, 1/3 flaxseed meal, and 1/3 vital wheat gluten. Since you can't use regular flour with a low carb diet, your dough mix won't be sticky OR stretch enough to make a decent tasting loaf of bread let alone a loaf that will even rise much. BUT, if you find a recipe with roughly the ratios I listed, you can make a loaf that rises HIGHER than regular bread recipes and tastes chewy and delicious. This type of loaf will only have around TWO NET CARBS per slice which is a VERY LOW CARBOHYDRATE CONTENT for a slice of bread that usually has 12-15 carbs per slice! The gluten itself is mostly protein and is much more nutritious than "normal" bread is. And the bread stays fresher much longer than a full flour loaf does! I really appreciate that I can get such a large sized bag of gluten, especially at this price because I go through a lot of it! On top of the size of the first bag, the included, extra smaller bag makes the size even greater and the $ savings greater as well. I pay at least double in the grocery store for less quantity! The very fine powder is also great for making other baked goods as well. I use it in the same "thirds" concept when I make meatballs...I use ground beef, goose and flax seed meal as well along with a thick pasta sauce, grated cheese and spices (a LOAD of garlic...lol) to make my "meatloaf" base to roll into balls. (I take portions out of the whole mass with a 1" wide biscuit cutter and then roll it) I do it this way to eliminate using breadcrumbs and again keeping the carbs down. The end product is a FRESH, high protein meal element that doesn't dry out in the oven when I bake them. (drying out is often a problem with regular meat, egg and crackers/breadcrumb recipes, but not with gluten)

Very reliable source for VWG
Bought it for a keto bread recipe (Diedre's Bread, on youtube). It works well. It is rather fine so it scatters far and wide easily. I have not made seitan with this product but I think it would be easy to work with, it mixes well and is finer than the Bob's Red Mill I had before. Would I order again? planning on it. Would I recommend it to friends? yes. Some believe vital wheat gluten is not keto-compliant or would call it dirty keto-friendly. It is simply the protein of the wheat grain. I have not gained from eating this. Have I lost? No but that is due to other things. Each person should gauge their own motivation and determination and go from there. If you have sensitivity or flat-out celiac disease, you already know, it's not for you.

Wheat gluten to add to my bread dough
I use the gluten when I bake bread. Works great to strengthen the dough. I mix a tablespoon of the oat fiber in my smoothie.
