What mixture do you pour in the moulds? Regular cement?

I use whatever I have to hand. Plaster of Paris gives a lovely smooth finish, ready mix concrete/postcrete gives a rougher finish. I just mix to a creamy consistency and pour. If using cement you need to add sand. Adding PVA helps too.

Is this semetrical on both sides? Or is it flatter in the back ?

No. The underside, ie the top of the mould, is flat with a rough texture
