when cutting i.e.bananas/fruit the steel gets very dark an is hard to clean I thought stainless steel is easy to clean/ any suggestions?

Strange.  We have never had any staining on our knife.  That sounds like the old, wonderful carbon steel knives that did stain if you didn't wash and dry them right away.

How to sharpen this knife, what are the blade angles?

Serrated edges normally don't need much sharpening as the cutting blade is not constantly hitting the cutting service - just the points between them.  There are machines that sharpen serrated blades or you can send it back to the manufacturer as they have special machines to sharpen them.

I went to cut a carrot and it cut slanted leftward...what's that all about?

Almost all serrated knives are "single bevel" knives, unlike ordinary knives which are sharpened from both sides.  A single bevel knife angle is about 20° and an ordinary Wustof, European-style blade is angle is about 40°.  A standard 40° blade can cut straight down because there are two bevels, each pushing equally against the blade on either side.   Because there is a bevel on only one side of a single bevel knife (bread knife), it always drifts away from the food on the side facing the bevel; the food pushes the bevel away, unless the material being cut is very soft.  If you try to take the "flat" (non-bevel) side of the knife and cut straight down, the cut will always drift, and the effect will be most pronounced in hard materials like carrots, hard cheese, salami, etc.  You can counteract the drift effect on a 20° single bevel blade by tilting the blade 10° away from the bevel, so you have 10° of blade on each side of straight-down (90°).   When you slice with the blade inclined 10° away from the bevel (towards the flat side) you'll produce slices that peel away from tilted side.  If your cut piece will not "peel" away from the larger mass, the blade cut will simply drift, as you saw it when cutting large pieces of carrot.  This can't be avoided due to the single bevel design.  Just compensate by tilting the blade so the blade V cuts straight down, and you'll love this knife.
