Do these bleed through typical adult coloring book pages (I.e secret Garden, Posh)?

Yes, it does bleed through. I recommend that you either cut the image you're coloring out of the coloring book, or that you slide something nonporous, like a piece of cardboard, between the image you're working on and the image behind it while you're working on it. BTW - I love these pens - the color is really great and the nibs are good quality and they don't shred or tear up the paper.

Will these bleed through thin paper, such as the paper found in journaling Bibles?

Yes. I own a Thomas Nelson KJV Journal Edition Holy Bible and just to answer your question pulled out these markers and did a test on one of the notes pages. One stroke of color ended up heavily shadowing on the back of the page. Two strokes bled through. Four strokes bled through on the next sheet of paper. They are water-based... so it's expected. You can use them to watercolor.You COULD (& since I just discovered this for you, I might... or will....) do bible art on tracing paper or deli paper and then use Gesso to put it seemlessly in your bible. :)
