Will these work with both the small and large size Goya discs?

They do not work on smaller size gyoza discs. I bought this specifially for that purpose and was very disappointed when I realized the press is way too big to come even close to sealing the edges.

Can you use flour tortillas to make cute beef/cheese snacks?

I use them to make fruit filled empanadas, I’m sure you can use flour tortilla.
