Does this work well for edge control? Any flakiness?

I haven't noticed any flaking. I don't know what edge control is.

Can this be use as age control?

No, but it works well for hair gel!

I have longer fine naturally curly low porosity hair. Is this gel ok for me even tho it contains soybean protein?

I have used this gel since I discovered Giovanni products in a health food store in the late 80s. Use it sparingly. I have medium length hair and use 3/4 tsp., at most, on my ends and I spread some gel on my palms to transfer to the rest of my hair. The gel helps strengthen your hair, generates new growth and maintains your B-12 level. A low B-12 level can cause hair loss.

I need a little bit of a sticky hold when blow drying my curls to hold them for the day. Is this like that?

Yes it should work fine. Holds my curls although I don’t use a curling iron. Doesn’t flake or look sticky and naturally when it dries

Use sparingly

I like this gel but I use it more like a finishing serum on top of other gels. Used on it's own it has a strange artifical effect on my hair but the hold is hard. Reduces frizz.
