That is a question for the manufacturer.  Is it dog hair or what source of human hair is generally stated in seller’s product details.  Usually, human hair is taken to mean they have paid someone to cut their hair to use it for making into hair pieces. Their are different grades of hair.  So if there are none such details, it is a good question to ask the seller.  Otherwise, buy from a seller with a good reputation for selling quality hair.

Why are the clips downwards whereas shown upwards in the picture and video?

Generally clip teeth point downward in direction of hair grows.  Some people do a small braid along the area the clips are placed. The clip locks into the braid along scalp. 
Other technique is to tease the hair along the part that the clip is locked into.

Theoretically you could wear the clips upside down using those methods.

The picture is displaying bangs.  The clip locks the bangs on top of head. It won’t matter too much which way they point. But generally the teeth point toward the bottom of hair direction.

On a wig or half wig piece, the top clip points toward back of head and bottom clips point toward top of head.

So, it depends on the type of hair piece which way clips face. The demo videos are not usually for the specific pieces but show general variations of ways to style and wear the pièces. 
Sometimes people attach clips upside down for some other reason as well.
