Having tried the majority of competitors couverture I decided to try out this Callebaut - 70.4% Ecuador CouvertureThings I likedThe packaging - nice big bag with a nifty adhesive fibre based locking - this prevents callets from going stale and keeps in the aroma.The nose - oh so sweet.. honey, dark fruits, subtle smoke and rich enough to own a yacht.The callets - they are very small - 5p sized - melt extremely easily in the microwave, perfect for sprinkling on any food/deserts/drinks - very moreish !The taste - so smooth, think Galaxy, but smoother with 70% less sugar ! Rich and velvety, virtually tannin free, no discernible astringency, absolutely delicious.Tempering - I use silicon bar shaped containers and mix with hazelnuts (all purchased from Amazon) - this is the highlight for me - at a decent thickness - the flavour is divine, very rich and did I say smooth ?Value - incredible value for this chocolate and I have tried most including ones from boutique chocolatiers - a few cubes of this instantly satisfies any chocoholic like me.#Things I didnt care for:At this point, none - totally happy and will re-purchase once this runs out.70% is very hard to get right but these beans are next level.
