Shouldn't there be two grit ratings? One for the flat sides, and another (finer) for the foolishly curved edges?

It would be best to clean the tool before sharpening it. If you're taking the time to sharpen your own tools, why not also clean them, and properly maintain them to both improve their performance and extend their life. Removing rust from your tools isn't difficult; honestly, it is more difficult to sharpen an edge tool properly than it is to clean off rust. A few minutes on the web is enough to learn how to do it.

No. You want a F923 it is made for a F13

How well will this work to keep hunting knives touched up while field dressing game when hunting?

You did not say, what kind of game . My 75 year old wife field dressed 4 deer this year, she shot with her bow. I never sharpened her knife,until after the season ended. Then I only used a few strokes with a medium diamond stone after steeling it, a few strokes first. Could it be your knife or your technique ? Hope this helps you.
