Love my old hickory cleaver
Love my old hickory cleaver. VERY solid piece of kit. Just be careful to make sure you dry it well otherwise it will start to rust. Happened to me once but a wire pad soon got rid of it. Comes very sharp, but sharpens real easily too.

Great bang for the buck
Great bang for the buck. Very affordable knife yet outstanding capabilities. Very solid and sturdy. The blade keeps its edge even after chopping trough thick turkey bones. Also the high carbon steel lend itself well to DIY patina. I bought it to replace my fancy thin bladed made in Japan blade which didn't bear very well with thick turkey bones. See videos. Even after carving a big turkey and going through thick bones, the Ontario knife was still able to cut thin slices of paper. Amazing knife. At that price you will not be afraid to use it for the toughest carving jobs. I am not sure if you buy a very expensive Japanese cleaver (+$400) you will be incline to put it trough the same treatment. I know I wouldn't because I would be afraid to break the darn knife. This knife will be usable for your entire life and will be passed to the next generation.

Great knife...sharp, heft and easy to handle.
Did a lot of research before I bought this cleaver. The Amazon reviews certainly helped. The knife didn’t disappoint. It’s a good size, easy to maneuver, not too heavy but at the same time heavy enough to do the job. Very sharp. It made very light work of breaking down 3 chickens. It sliced breast meat beautifully and broke through bones without any issues. Really great balance to get everything done with one knife.Didn’t need to use any other knife in the process and saved me so much time overall in comparison to using a regular chefs knife which I used to use. The handle is nice and easy to hold. At this price, a knife of this quality is a steal. Need to wash right away, dry and wipe with oil to keep it in good condition. I highly recommend this knife👍🏽👍🏽

Nice Carbon Steel Knife
Yes Carbon Steel will rust if you leave it in a sink or put it in a dishwasher. This is not a stainless steel knife. That does not mean it is cheap. I enjoy carbon steel in the kitchen and I find I can get a carbon steel knife sharper. If you want a knife that you don't care about and want to put in the dishwasher do not buy this knife.

Good Cleaver
Professional chef uses it once per week to prepare 200-300 ribs, just needs a hone after each use. No chipping or sever wear in 3 months
