Q: How thick is the thickest setting?

The rollers have settings that can be changed from 1 the widest setting to an 8-9 with each setting a little narrower to the desired thickness and consistency. My son and I use this frequently to make ravioli and fettuccini and pasta sheets for lasagna. We make the pasta dough and divide it in two and flatten it to the width of the roller and have no problems getting it through on setting 1. As you increase the settings the pasta sheet gets longer and has a better consistency. I fold it in half and repeat the process until the consistency and thickness I want is reached. Then change the rollers for fettuccini or spaghetti or prepare my ravioli or lasagna. This product works as described.

No, they are not dishwasher safe. It comes with a cleaning brush that you can brush out the debris.

Q: Will this work with a 4.5-quart tilt-head stand mixer?

The attachment should work with any KitchenAid Stand Mixer.
