Q: How does the gauge system work for dyneema fabric? Is 7 gauge thinner or thicker than 13 gauge?

Guage is the measure of thickness of a sheet or diameter of a cylindrical shape. So the 7 gauge would be a larger diameter thread than a 13 gauge thread.

Q: how well do they protect against bites from small rodents (i.e. lab mice, etc.)?

These aren't puncture resistant, they are just cut resistant.

Q: Any reason I couldn't use these to work a mandoline for cutting potatoes or onions, or is the polyurethane coating toxic in some way?

You could for some light use and it's not toxic but might not last very long. For prolonged use a nitrile coating will hold up better. If your talking about for food industry you would typically use non coated. To can hand wash with water and a little mild detergent.
