dishwasher safe???

I have had these knives for several years now and continuously wash them in the dishwasher.  They have kept their fantastically sharp edge and have never rusted.  I will never buy another steak knife as long as I can purchase these.  My daughter and her family have just returned from Japan to live in my basement so I am having to replace the knives she has taken from me!  C'est la vie.

What type of stainless steel is used for these?

It says in the description that their knives are made of surgical grade stainless steel. Reviewing the page on surgical stainless steel in Wikipedia, since surgical grade is an imprecise and undefined term, I guess we can rule out medical stainless steel, the grade of steel used for implanting in the body, which is usually 316 and 316L (low carbon). The next logical assumption would be that is cutlery grade, which is used for surgical cutting instruments, and those are usually 440 or 420. These are high carbon steels that include chromium, with greater hardness and very good corrosion resistance compared other cutlery steals, but less resistant than 316 stainless steel.

Do these knives cut or saw through meat? What I mean by that is it a clean cut or is there meat clinging to the blade after making the cut?

The edge is serrated but it is a clean cut and there wasn't any steak sticking to the blade when I was done cutting.
