Will the larger adaptor cap fit a VP racing 5 gallon jug? I believe the diameter of those are approximately 63 mm.

There are numerous adapters that come with it. By the way I have had it and have used it for a while and it has been great.

Is pump compatible with Ethanol and Methanol?

I have had this pump for over a year with no issues. Not sure on methanol.

Is this set up to pump from a vehicle to gas can? Or can it be set up that way easily?

No. It is designed to pump fuel from a 5-gallon gasoline container into a tank, not the other way around. The pump itself is on the end of the suction tube, and it would not fit into the neck of a fuel tank on a vehicle. And the suction line is very short, having been designed to work in a five-gallon container.
