If I need two more sets of "wheels" for my 2610 wall mount sets, do these fit?

Yes, they should fit. I found it better to upgrade to the ball-bearing wheels for just a little bit extra cost, they glide much more smoothly.

What is the dimension from outside of wheel on one side to outside of wheel on opposite side. I am trying to determine if this will fit my track.

That dimension is approximately 1.53" or 38.9 mm. The Johnson drawing does not indicate that dimension on its drawing for the 1125 wheel hanger. You can see the drawing by clicking on the 1125 "Drawing" link at http://www.johnsonhardware.com/1560.htm for the "U-channel" box track system.The hanger shown in the 200PD series is completely different because it is for the "T-track" system. The parts for the two different track systems are not interchangeable.

I will be using a super strut rail (1-5/8 in). Will these rollers fit?

I can't tell for sure but In the description those dimensions are included

The set includes one hanger, one adjusting wrench and one pair of rollers joined together on the track “follower”. Each door requires two sets — that is, two hangers and two followers, for a total of four rollers. Very heavy doors may require a third set. The Johnson company help desk can advise what systems to use for very heavy (e.g., 200 pounds or more) commercial doors.
