Q: I would like to water on Wednesdays and Saturdays. The timer says that I can water "by day of the week". Will this work for me?

Yes - and just a minor correction for Laura J. you can water up to 4 times (not 3) per day/ 7 different days per week. I've had it for about a month now and it's pretty nice. Set it and forget it. BTW for the hose connections I used teflon thread tape to make sure they seal well.

Yes. But the duration is the same.

Q: Can this timer be set for 8 hours each night to supply water to movement activated sprinklers to scare away deer? I want them off in the daytime.

Yes. It will supply water for 8 hours (or any other period) in 1, 2,3 or 4 time slices to whatever you connect it to. Of course, it won't detect movement, so your movement activated tap needs to effectively turn on the sprayer.

Q: Can I (for example) set this timer to run in 30 to 40 minute increments from 10am to 5pm?

I set mine to run for 5 minutes every night at 1am 3am and 5am. so you probably can do what you want. but you can only set 3 or 4 on off times a day.
