Can someone describe the flavors, or better what flowers its made from?

The honey is a light amber color and has a robust wildflower flavor. The main flowers it comes from is Indian Blanket, Scabiosa and a little bit of clover.

Hello,Our procedure is to skim the top of the barrels of honey to remove foreign items. Wax, bee parts, etc all float to the surface fairly quickly so it's easy and effective. Thanks for your question!

What is the maximum temperature this honey is heated to, and does it eventually crystallize? It is a lot thinner than I expected. Very tasty though!

Hi Susan,A couple of things, first, we don't heat our honey. It begins to break down at 140 degrees and beyond that is considered "heating" by industry standards. Honey naturally gets over 100 degrees in the hive without damage, so we keep it around there. Secondly, because it is not pasteurized or cooked, it will crystallize in about six months. If it does crystallize, we recommend placing the container in a bucket of warm water and letting it slowly re-liquefy over time. We don't recommend microwaving as it will destroy the natural benefits of our honey. Thirdly, as to the texture, our honey is from Texas wildflowers, which traditionally do produce a honey that is a little bit runnier than some. Other types of honey, such as clover, are very thick. We let our bees determine the correct consistency of our honey so we don't alter it in any way! Some companies process their honey to get to a standard consistency, but we don't believe in doing that to our honey. It tastes much better straight from the hive to the bottle!
