Q: What type of koji starter do you use. Is it gluten free?

I have absolutely no idea what you want to know. This is white miso paste. I mix it in hot water with little chunks of tofu, some sliced green onion, and strips of seaweed to make miso soup.

Q: Is this product non GMO?

yes, this product is non GMO and has been for a long time. my family has used it for three decades and it has always been non GMO. The Japanese (even though it comes from Hawaii) are very aware of the dangers of GMO products since Monsanto introduced GMO soy in the 70's or 80's. There was an error in calculations that caused the soy to have too high a level of protein that damaged the kidneys of thousands and even killed some people. You are wise to be concerned with GMO products.
