Does this sharpener work on serrated knives?

No. It would actually smooth down the serrations and you don't want that! Serrated knives don't often need sharpening since it is their teeth (not their blade) that do the work, but if you do need to sharpen one, you must use a honing blade and sharpen each indentation individually.

Will it sharpen pocket/folding knives?

Yes. I sharpened my kitchen knives as well as a few "old timer" pocket knives. Can't go wrong for the price of sharpener

Easy to use, yes. Clean fast and easy, no.

Does the material of the knife matter like Damascus or Ceramic?

Yes, the material of the knife matters. Mine will not work well with ceramic blades. Actually does not work at all with the ceramic.
