Is this suitable for Santoku knives?

It will work for all DOUBLE BEVEL, NON SERATED, STEEL (not ceramic)  knife.But it is best for western santokus made of german steel which are soft and ductile and which do not need a tight cutting edge.It's been years since I've used one, but the bevel is about 19 degrees which is common for many western knives.Often people who use Japanese knives are used to much more extreme bevels. Wusthof santokus are at 15 degrees straight from the factory, so if you use this it will make the blade LESS sharp than factory edges, but the knife WILL be useful at the time you need it. This IS a great useful temporary, tool, just use it as intended and don't assume it's a long term solution., and worse, over time it will reprofile the knife permanently. But if you use it a few times over the knifes life in an emergency there wont be any damage done because the next time you do a real sharpening, it will bring it back to normal.But please understand what this is.This is not meant to be your only knife sharpening solution.This is your portable, quick and easy emergency sharpenerIt is NOT meant to replace real sharpening on stones or by a pro sharpener.These are very rough on knives. They sharpen by removing a lot of steel shortening the knifes life.But sometimes we need something light and quick that we can pack along.As mentioned, I remember there being at least two different modelsI don't personally own one, but know cooks who have to travel a lot, that do so I have used one several times

How many times do you swipe it through to get a knife sharp?

It is not a knife sharpener,, It is a new modle STEEL.. after you run  your knife thru a sharpener you keep the edge on the  knife with this, I run my knife thru 3 or 4 times before I use a knife, and when cutting after a couple of minutes.. only 3 or 4 times is all you need

No, the only angle would be how you place the knife between the sharpening area.  Note: it works great!
