can this faucet be mounted in the Standard sprayer hole on sinks? (Approx 1 1/2 inch hole)

Can you, Yes. But the problem is that the base of this is just a tiny bit smaller the 1.25 inches. So it will NOT cover the hole completely since it is in an oval shape NOT round.

Can you change the filter without turning off the water?

Yes you can change the filter with the water on. When you twist the filter to remove an old one, it physically disconnects, then when you twist the new one in, water flow returns.

What does this water filter remove? Mercury?

The included EZ-1 filter (according to the manual) states chlorine, class 3 particulates, and Standard 42. ANSI Standard 42 is for chlorine(taste/odor), chloramines, iron, manganese, hydrogen sulfide, pH neutralization, and zinc reduction. Mercury would fall under Standard 53, which includes heavy metals (arsenic, cadmium, chromium, copper, lead, mercury, selenium), inorganics (fluoride & nitrate, nitrite) and volatile organic chemicals (chloroform surrogate). For these you need the EZ-3 filter.

At this level of filtering, would the water be equivalent to distilled water?

Only a "still" or distillery can make "distilled" water. If done correctly the water should be "chemically pure". Neither reverse osmosis (RO) nor any kind of filter will even come close!
