Exceptional Quality
From construction to performance to visuals, this knife exceeds expectation. Ive intentionally waited a few months before writing this review to get a true idea of its performance. I have used a Shun Classic 8 inch chef knife and a Wusthof classic 8 inch chef knife for years before this so I will compare against those.I am no professional chef but I consider myself an avid home cook. After discussing with several of my friends who are professional chefs, the name Tamahagane kept coming up. I ordered this and cannot be happier.The bolster/handle complex is much more comfortable than the Shun Classic 8 inch chef knife. The performance is similar but I find this keeps an edge longer and is less prone to sticking on the face of the blade. Obviously, Japanese style blades are lighter and afford less bulk than Western style knives but this can handle heavy jobs as well. Compared to the Wusthof Classic 8 inch chef knife, this is thinner/lighter/stiffer and maintains its edge WAY better. I will say though, for BIG jobs (shell cracking and large scale butchery) this may not be your knife.The sharpness, balance, and comfort in hand set this knife apart. It outperforms the Shun and is more comfortable than the Wusthof.

BEST Chef Knives
These Knives were a gift to family members. I had purchased Tamahagane Kyoto for myself so I know the Product. I have found through use Tamahagane knives are about the best knives for the serious chef. BEAUTIFUL blade with the correct weight and balance. EXTREMELY sharp! You should only need to polish the blade edge if it needs sharpening. IF it gets really dull, only use Japanese sharpening stones in the highest of grits, 1000 or higher. They are not cheap! but will last a lifetime if taken care of!

Worth every dollar, gorgeous and ridiculously efficient
SO nice!! Sharp sharp sharp right out of the nice packaging. Absolutely stunning performance and appearance. Yes, these are our first $100+ knives, but at his rate, I think they very well could be the last! All four we purchased have a terrific weight and feel in both mine and my wife's smaller hand.
