The copper core makes this pan very responsive to changes of your temperature setting. Be aware that the copper will tarnish very rapidly if that is a concern you might have. All-in-all this is a lifetime pan.

If you are buying Hestan copperbond , I’m going to assume you are buying them because you are looking for excellent craftsmanship and cookware that allows you to control the heat of your food better than thick stainless steel would. If this is not you, please redirect yourself to some nice non-stick cookware that is easier to use. If this IS you, CopperBond is worth every penny. Yes, the copper won’t look beautiful after you use it; but some polish if that bugs you! If you understand the science behind cooking, you will not have issues with sticking or burning. I am slowly building a complete set as my prior cookware wears out, and each piece I’ve bought has amazed me with its performance.

Ahhh…. The Ultimate Non-Stick Pan with out the chipping of used teflon non-stick pans. This pan is Absolutely amazing at holding heat on an electric stove cooking sautéed/fried potatoes or green beans almondine or a NY strip or Tenderloin - you will develop quick trust and confidence in this pan; it will be your Go To pan Always!

I have decided to get rid of my nonstick Calphalon pans..I love them but the coating comes off and I"m very careful with my pans. I decided to try Hestan. First thing I cooked was scrambled eggs. I oiled the pan well but the eggs stuck really badly and was hard to get out. I forget what I cooked next in it but whatever it was, it was fine..so I tried eggs again, this time using olive oil to coat the pan. It was slightly better but the eggs still stuck to the pan however the pan cleaned up much easier. I'm hoping it's just a matter of getting used to these as I want to get more pcs. This one has just been my trial piece. It is a beautiful pan, I will say that April 7, 2022 I thought I would add a little update. I don't use this pan that often, but I have cooked scrambled eggs a few more times...first coating the pan with olive oil, getting the oil hot before adding the eggs and then turning the heat down. They still stick but not as badly. I soaked the pan in hot water and it came clean easily. I will need to polish the copper but years ago when I had Revere ware copper bottom pans, I had to polish those as well. I hate not having it be a non stick pan but I spent a lot of money on the Calphalon only to have the nonstick peel off....so that's a waste. I never wash my pans in a dishwasher so that doesn't bother me either.
