A ingredient you must have can't replace and kosher
Barberries is a frequently used ingredient in middle eastern cooking espically with bismarti rice. It seems like it's cranberries but it's very different. Cranberries are sweeter., Barberries are more tart. A little trick I can pass on. Soak the Barberries in Apple Cider vinegar just cover the Barberries for about 2 hours or more before you add to your cooked rice. The apple cider will make the Barberries plump up. I add Golden raisins to the Barberries and apple cider Vinegar. Once you cook your rice, drain what ever is left with the Barberries and golden raisins dont throw the liquid over the rice it will over power. The Barberries and Golden raisins will absorb most of the Apple Cider Vinegar. Then purchase the most expensive ingredients they say on earth. Saffron flakes. DO NOT soak the Saffron flakes with the Barberries and Raisins Take a pinch of Saffron Flakes. Add to a Mason jar or other glass vessel. Allow to stew for a good 3 hours. The longer you leave the Saffron flakes in the water you'll get that yellow color. Once rice is cooked, I add 2 cinnamon sticks and 5 cloves ( like real cloves) with margerin toast the cinnamon sticks and 5 cloves in the rice pan for 2 mins. Must must soak the rice in cold water best if overnight but a few hours will work. Cleans the bugs you don't see and Rice. But allows the rice to bloom. Take the rice throw in the frying pan with the cloves and Cinnamon sticks. Toast, stir often with the Margerin till you smell like a pop corn smell. Add one cup of BOILING water for every cup of rice. ( check the internet and Rice type on water measurements.) Stir now the rice , cloves and cinnamon sticks with the Boling water don't bring the water back to boil. Cover the rice with a tight lid. Lower the flame till the lowest it can go. Don't worry this will Flawselly. DO NOT keep checking the rice and opening the lid even if you see water it will absorb. For a half hour. The rice will be perfect! Remove cloves and cinnamon sticks you'll easily be able to find and remove. Take rice out of pan find a flat serving dish. for presentation. 1st layer is Cooked rice. In the center of the rice pour the Barberries, golden raisins. Remember to remove the apple cider vinegar liquid if you can. The pour slowly like a swirl motion the Saffron water. The key of the presentation, is to have the white of the rice be present and the Saffron yellow water as thing racing stripes pattern. Otherwise all your rice will look yellow. Whic doenst change taste but your guests or family will give you the ooohh ahh if you try my trick. I've seen Almond clovers added to the Barberries and Golden Raisins. I'm nut fearful when I cook. I make a amazing Lamb riblets I cook for 3 hours on a Dutch oven then in the center of the rice I make a bit of a well and put the lamb stew in the center. Its quite cheap ingredients but a very fancy service. After the first 3 spoonfuls served all the ingredients get mixed together. Don't worry the food will stay taste awesome The Barberries will give a kick like sour but a bit sweet not to sour. The textures is more like Curants than Barberries. Buy a bunch of these from this vendor as this is hard to find in general and with a top notch widely accepted Kosher label. You will love the taste and will end up using a lot more than you think

Saw this used on a cooking show so I had to try it. What a delicious surprise - fruity, acidic, not too sweet. Inventing different ways to use it - thinking fish! Great product - more people should know about this!
