Hi there, as freeze-drying is the best (currently) available method to preserve perishable foods, the shelf-life is given by the quality of packaging alone. If packaging would be 100% perfect, shelf life is several decades (freeze drying is often used for emergency food preparation). But nothing can be 100% perfect, so we use quadraplex 4 layer craft doypack and we give 18 months since packing. Can this product be used as a baking ingredient?

Hello there, for any raw desserts, cream, decoration freeze-dried fruit is fantastic - beacuse it does not contain any water and its super intensive in taste and colour. However, if you put it to oven/bake with it, it will simply burn too easily and all the beauty will be gone. The best use for Freeze-dried is for products which are not baked. However, on finished baked goods (decoration, sprinkle etc) its perfect.
