I placed my plugs in the refrigerator and they have completely molded over. Is that normal?

They turned white i bet. that is great news as your plugs are thriving. The white "mold" as you say, is the mushroom MYCELIUM! Your in good hands.

Would pecan wood be a good growing medium and could these be grown in full shade in areas in which summer temperatures can reach 100 degrees?

The company recommends a shaded and moist environment so your shady areas should be good. Don’t know about the pecan wood though

Can these be used with Pine? (specifically red pine)

Pine is not good at all for Shiitake inoculation.

I would think so. You choose your own logs. However, I didn't get any mushrooms whatsoever. None.
