Not sure how deep, but I use it for ski gear and I am pleased!!

Will it water proof my Carhartt jacket?

Doubtful. This product is meant to revive articles that were waterproof or water resistant to begin with. It will probably help keep it a tad drier, but it definitely won't turn your carhartt into a raincoat.
