I pre-ordered it on a whim, and decided to make the Better Nut Mac & Cheese as a first test of Maya's recipes. It took no time at all to make and I didn't even have to plan ahead to soak the cashews. The taste was fantastic, the sauce was full of flavor, and it was easy to add extra veggies (in the form of frozen peas). I brought it to a friend's house to share and everyone (even non-vegan/vegetarians) was impressed with how great it smelled and tasted. Unlike a lot of the "fast & easy" veggie-based cookbooks I've purchased in the past, Maya's recipes are full of flavor and variety. As with most contemporary cookbooks, there are great photos accompanying each recipe. I'm really excited to try a lot of the other recipes in this book, like the Kung Pao Chickpeas and the Eggplant and Roasted Red Pepper Veggie Burgers. The fact that I don't need to plan far in advance to make healthy, delicious, filling vegan meals for breakfast and lunch is a strong selling point for this cookbook, as needing to plan ahead to pre-soak or marinate is difficult for me to do during the week. I think this cookbook will appeal to a broad audience, even non-vegans. These recipes are perfect for anyone looking to for more variety in their diet and how to incorporate more nourishing, flavor-packed vegetables/fruit into breakfast/lunch/dinner/smoothies without spending hours in the kitchen or meal planning. It is organized well, and has unique recipes with clean ingredients that are genuinely quick to prepare. Some require a little baking time, but the hands on time is very short. Also, the recipes are flavorful, which is sometimes hard to find in 'quick & easy' cookbooks. I have already tried the zucchini boats, vegetable gratin, and vanilla sky apple pie smoothie; all were delicious. I have nearly the whole book flagged with recipes to try, which is rare for me. Whether you're plant-based or omnivore, if you're looking for quick, tasty, clean recipes this book is for you. Oh, and I'm not sure I understand the negative review that states the breakfast section is almost all smoothies; there are 20 breakfast recipes total, with only 5 being smoothies (it's in the table of contents). I can't wait to keep using the book, and for future content from Maya!

Incredible variety of delicious and speedy recipes

I can honestly say this is in my top 5 favorites. It is organized well, and has unique recipes with clean ingredients that are genuinely quick to prepare. Delicious, easy recipes, some of which I now make regularly. My favorite of all the vegan cookbooks I bought.

Easy Vegan Breakfasts and lunches
I am a Vegan beginner... so I was looking for cookbooks that were not too hard to follow and would offer some inspiration... this cookbook is great on all accounts. So far, I haven't found anything too difficult or needing odd tools or ingredients so weird you can't find them...... so that's all a plus. It does say "Easy Vegan"... but just to be fair, I have found that vegan cooking can take a little more time for me as I am not accustom to it... yet... I'm working on it. One the best features in this cookbook are the photos! So many cookbooks these days are without photos - which is not very inspiring - I mean - I get that the photos are expensive to add, but they make - or break a cookbook in my opinion. One of our favorites is the peanut butter banana pancakes... There are a lot of recipes using what you would expect... black beans, quinoa, lentils and the usual veggies and some nuts. Honestly, if you're looking to venture into the possibility of a vegan diet, out of the 4 books I ordered, this one is the one I usually reach for. Book and movie reviews are very subjective, and I get that. I try to be as helpful as I can when reviewing such items.

Must-have for Vegeterians
If you're just starting out with veganism or vegetarianism, this is a great start! Lots of easy, delicious recipes. Take your time making the recipes and taste along the way. You'll really enjoy this book.

A Gem
I have tried every recipe in this book, and have found them all delightful. It is refreshing to find vegan recipes that also avoid the use of sugar as a sweetener, and include so many healthy ingredients. If you like spicy food - both with heat, and with the use of spice - you will find plenty of recipes that indulge your taste. If you have a sweet tooth, Maya's snacks and some of her breakfast recipes will be something you will wish to try. As a beginner, I found these recipes easy to follow, quick to prepare, and not too challenging for someone new to kitchen skills. If makes a great introduction to vegan food. Highly recommended!

Excellent vegan cookbook
Excellent vegan cookbook! Every recipe I've tried has been a success (Blueberry Chia Overnight Oats, Custard Cream, Crunch Time Chocolate Crispies, Vegetable Gratin, Udon Noodles, and Just Because Carrot Cake Bars (of which I am currently eating!)) The layout is attractive. The ingredients required are minimally processed and accessible. The recipes are healthy. I appreciate the measurements listed in both weight and volume. This cookbook is a highly recommended addition to anyone's cookbook collection.

This book is truly delightful. I bought the Kindle version and flipped through it to see what I wanted to make. I seriously bookmarked every recipe! The lentil balls are delicious -- and so easy. There's a great variety of recipes and no complicated ingredients. I can't wait to crack on working my way through them! Bravo, Maya Sozer, bravo!
