Tastes like sugar - Mostly
I like this alright. It's nice to have a sugar-free option for making icing. It is much better than the other chemically derived & highly processed sugar substitutes. Having the combination of Erythritol, Corn starch & Reb M, it is formulated to measure 1:1 like sugar.I tend to have a mild GI upset from the the Erythritol (a sugar alcohol) in it, but it is not as bad as straight straight sugar alcohols, like xylitol, mannitol, sorbitol & straight erythritol.I have a recipe for a pound cake that calls for powdered sugar. The batter & cake/bread texture is different than it is with with plain sugar. In baked goods the batter is more liquid & texture is smoother, really more like the texture of a bakery pound cake, fewer bubbles, denser, smoother texture, almost like a dense, dry cheesecake.One negative thing I've noticed, both with the powdered & granular sugars is that my cakes & breads always end up with a dense, wet layer at the bottomer, even though they test as done. I cooked a pound cake last night & added twice the baking powder that was called for in the recipe. I also added it as the very last ingredient so that it wouldn't begin reacting until I was ready to pour it into the loaf pans. I let the pans sit for a few minutes before putting them in the oven, so that the baking powder would have some time to start reacting before being cooked. t ended up with the same dense, undercooked-looking layer at the bottom of the cake, even though the cake tested as being done. I even gave it a few extra minutes in the oven. This happens with both the powdered & granular sugars that Purecane offers.Many people have claimed that they bake with success. If anyone, including the manufacturer has any suggestions for eliminating the problems I'm having. I would appreciate suggestions. I'll also post it as a question.

Best sugar substitute, by far
Tastes like sugar. Dissolves like sugar. No chemical taste. Not quite as potent, but close. Doesn't matter if you're cooking with it, adding it to food or drink as a sweetener, or eating spoonfuls right out of the bag, it is as close to the real thing as possible. I love sugar and if I can't have it one day, this will be my new favorite food. We keep it in the house now for guests and low glycemic baking. Cost is of course higher, but it is the substitute that satisfies

performs exactly like regular confectioners, but it is super sweet. NO stevia
This blend contains just Erythritol, cornstarch, and Sugarcane Reb M (rebaudioside M). Not to be confused with Stevia Reb M (rebaudioside M). There is NO stevia in this. This reb m is derived from the fermentation of sugar cane. So basically, you are getting the sweetness of sugar without the "sugar". NO stevia, and therefore NO stevia aftertaste.It is very sweet, and because it uses erythritol it has the slight cooling effect (a chemical reaction). But it is faint. This effect can be reduced by including other sweeteners (in this case, sugarcane reb m). So not as intense as straight erythritol.The powder is exactly like regular confectioners sugar, so it will work the same and have same texture/consistency. But boy is it sweet. I made a quick vanilla frosting, and initial taste really perked up my taste buds (yum), but then it was like.. woah, this is intense. I then turned it into a peanut butter frosting hoping to reduce the sweet assault. It was better-ish, but once on the cake I made, it just seemed like too much. I dont know.. the sweetness level wasnt pleasant. Didnt stop me from eating it, though!The addition of peanut butter made me think this could work to sweeten peanut butter fudge recipes.What I may do is cut it further with cornstarch or something non sweet. I want a reduced sugar frosting option, but the intensity of these non sugar sweeteners make it hard to be 1:1 swaps. I dont think there will be better brands unless they are able to cut in other non sweet powder. SO I really dont rate on that.For the price i have considered just making my own confectioners sugar, but I am lazy, and I really liked just buying this bag for ultimate convenience.Solid 4 stars.(PS, why is current price for larger size bag more pricy per ounce than the smaller bag by quite a bit $1.13 per ounce for 24 ounce bag, versus $0.77 per ounce for smaller 12 ounce bag. Weird. Usually costs less to buy larger quantity. You'd be better off buying 2 of the smaller. Just keep eye on price per ounce).

Too bad the company went bankrupt
This was my absolute favorite brand of sugar substitute. This powdered sugar, the granulated sugar and their brown sugar! The best tasting by far. You can't find it anywhere anymore. So disappointed. Nothing compares

Important for baking.
This product is a great. Cannot tell the difference in pure cane and regular powdered sugar. Does not leave an aftertaste like the other brands I have tried. I have diabetic family members and use this product frequently. I highly recommend it.
