This dried sausage is reminiscent of the type we used to enjoy when we were stationed in Europe. It has the right fat to meat ratio. The flavor is amazing - though I personally prefer a bit more spice. The fennel flavor isn't very pronounced. It is expensive, but for the quality worth the money.

Generally it was pretty good. A little greasy and tough to chew. As far as Finocchio flavor - it was barely noticeable. Finocchio is the Italian name for Fennel. Please do NOT confuse Finocchio aka Fennel with Anise. They are not the same thing and are entirely different genus and species. Okay, so if you are looking for more noticeable flavor, this is only so so. Any fennel taste is mild at best, so eat with some extra fennel if you are looking for an extra punch.

I am on subscription because I love this sausage so much. I recommend trying if you like real Italian salami

Earlier formula, dry was fabulous and amazing: I loved it multiple times per month; new slimy formula is not worth the $18. Not the same Avoid The texture does not rise to even mediocre with the outer portion downright slimy and there is a new casing that is akin to an old stocking. Size is smaller (guess everything had to get either smaller or more expensive) inside the new vacuum pouch. Huge disappointment.

Somewhat expensive, but worth it. Tastes like I expect a good fennel salami to taste (like Toscsno we used to be able to buy at Whole Foods, but they stopped carrying it). Only problem is it disappears too fast.
